Blackberry and almond tea cake

Hi I love this time of year. The lead up to Christmas is fun but very busy. Already the shops are a lot busier. Those of us who have dietary restrictions or those who just want to clean eat. The holiday period can be a difficult time and a healthy diet can be hard to maintain. It’s great to have a few healthy treat recipes that everyone will enjoy. Like this cake. Filled with whole foods and it’s also gluten and dairy free. Would suit those on a gluten-free diet or paleo diet.

Ingredients 

dry

2 cups almond meal

1/3 cup coconut Flour

1 tsp baking powder 1/2 tsp bicarbonate soda

pinch salt

1/2 cup brown sugar/or rapadura sugar

wet ingredients 

3 eggs

1/2 cup almond/coconut blend milk

1/2 cup olive oil

1 tsp vanilla extract and 1/2 tsp almond extract

zest from 1/2 a lemon

topping

1 cup fresh blackberries

1/2 cup sliced almonds

2 tbsps raw sugar

method

take two bowls. Mix all your wet ingredients in one bowl and dry in the other. Mix both bowls well. Then pour your mixed wet ingredients into your dry ingredients. Stir to combine. Pour into a lined 20cm springform cake pan

Topping mix sugar and blackberries and place over cake  press blackberries down a Little then top with almonds

Bake in a preheated oven set to 160c fan forced. Bake for about 50 /55 minutes check cake is cooked with a tooth pick before removing from oven.
