Paleo bread and chia seed jam

 

I thought it’s time I shared one of favourite and easy breakfasts. My paleo bread and homemade jam is a family favourite. The bread makes great toast too. This breakfast is a great healthy start to the day as it contains no refined sugar and it’s gluten free. Make it at the weekend and have breakfast for the week sorted. We also like the bread topped with avocado.

Paleo bread 

ingredients

dry

2 cups almond meal

1/3 cup arrowroot flour

good pinch of salt

1 tsp bicarbonate soda

wet

3 eggs

2 tsp apple cider vinegar

1 tbsp honey

1/3 cup olive oil

1/4 cup tinned coconut cream

method

take two bowls place dry ingredients in one and wet in the other

mix bowls well then pour wet into dry and mix well. Pour into a silicone loaf pan. Bake in preheated oven set to 160c for 45 minutes. Check loaf is cooked before removing from oven.

chia seed jam

2 cups frozen raspberries that have been thawed

2 tbsp maple syrup

1/4 cup white seeds

method

place your raspberries and maple syrup in a food processor. Give a quick blast a few bits of fruit is good your not making a smoothie .

stir in your chia seeds and pour into a glass jar.place in fridge to set and thicken.7925B620-8F2B-4918-BA4D-D21E57AABA6C.jpeg
