This paleo style banana bread is a firm family favourite. We love ours topped with choc chips so delicious. The chocolate melts into the bread and it tastes incredible banana and chocolate goes so well together. This is a simple recipe with not to many ingredients and it’s gluten and dairy free also free from refined sugar. Great use of bananas that are overly ripe.
2 cups almond meal
1/3 cup tapioca flour
1 teaspoon baking powder 1/2 tsp bicarbonate soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 cup maple syrup
1/4 cup olive oil
2 well mashed bananas
pinch of salt 3 eggs
This recipe is so simple to make. Take two bowls and place all your wet ingredients in one and dry in the other. Combine the contents of both bowls well.
Nest pour your wet ingredients into your dry. Combine with a wooden spoon. When well combined pour your mix into a silicone loaf pan.
If you wish sprinkle on some cacao or chocolate chips. This recipe makes great muffins too.
Bake in preheated oven set to 160c for approximately 45 minutes. Check to see loaf is baked through before removing from oven. Cool for 15 minutes in pan before turning onto wire rack to finish cooling.
A great lunch box item. This bread also keeps well. Happy baking.
