Quick mix chocolate cupcakes gluten and dairy free

These cupcakes are delicious and super quick to make. Just use one bowl to mix and they also can be vegan. A great treat to take to a friends or when entertaining. No one will know they’re gluten-free and vegan. Also makes a great large cake for a birthday just increase cooking time.

Ingredients 

1/2 cup vegan butter

1 teaspoon pure vanilla extract

1 1/4 cups castor sugar

1 1/3 cups gluten-free Self-Rising flour

1/2 cup cocoa powder

2/3 cup water

2 eggs (use organ egg replacer for vegan)

icing ingredients 

90g dairy free chocolate (dark chocolate)

30g vegan butter

1 cup icing sugar

2 tablespoons hot water

method

1/ preheat your oven to 180/160 for fan forced  line muffin pan with 12 paper cupcake papers

2/ in the bowl of a mixer place the butter,vanilla,sugar,eggs mix well to combine then add flour and cocoa powder

mix flour in while slowly pouring in water

3/ place mix in paper cake cases  make sure mix is evenly divided

place cakes in oven and bake for 25/30 minutes

check with a toothpick to make sure they’re cooked

4/when cooked cool on wire rack

make your icing

melt butter and chocolate together,you can do this in a microwave just be careful not to burn.Processed with VSCO with a7 preset

then add your icing sugar and hot water mix to melted chocolate and butter.mix well when smooth spread over cupcakes .

So good these are always on our table at family birthdays .
