This is such a simple recipe and so delicious. The other day we went plum picking. We live on the very edge of suburbia close to farms and little country towns. We came across this place as we were driving around at the weekend.
I think fruit picking is an easy way out for farmers. How clever getting people to pick your fruit and still pay for it. I’m sure this recipe would work with any stone fruit. It’s a great dessert cake.
2/3 cups vegan butter
2/3 cup rapadura sugar plus one tablespoon
2 cups almond meal
1/2 cup gluten free plain flour
2 tablespoons orange juice
zest from one orange
1 teaspoon vanilla
1/4 teaspoon almond extract
1 teaspoon baking powder
3 plums sliced into thin wedges
preheat oven to 160c and line a 23cm springform baking pan with baking paper
1/ using an electric mixer place 2/3 cups sugar and vegan butter. Mix on medium speed until light and creamy. Gradually pour in almond meal. Then add eggs one at a time. Mix in orange juice,zest,almond extract,baking powder,salt. When blended reduce speed to low and add flour. Mix until just blended. Pour batter into pan.
2/ toss your plums with the 1 tablespoon sugar. Arrange plums on top of cake. Bake for 45 minutes. Check cake is cooked before removing from oven. Cool on wire rack for ten minutes.
