Gluten free pancakes

16A2EAE4-F7D0-4806-9491-0E5ED735CA44.jpegwhen I first started blogging and on Instagram pancake Sunday was a huge thing. My feed was full of beautiful pancake pictures but it’s not so big now. I think it’s something we should bring back as pancakes are so delicious and pretty easy to make. I’ve got two recipes to share today both delicious and of course gluten-free. 

Bascic gluten free pancake

1 1/2 cups gluten-free self raising flour

2 tablespoons sugar

pinch bicarbonate soda

1 cup milk

1 free range egg

1 1/2 teaspoons vanilla extract

3/4 tablespoon melted butter

method

mix all ingredients but the flour in a bowl. When combined add the flour and mix it in. (Don’t overmix as it will make pancakes rubbery)

heat a frying pan and cook on medium heat

cook 1/4 cup mix per pancake.

Almond pancakes

1/2 cup almond meal

3/4 cup gluten-free self raising flour

1/4 cup sugar

1/4 teaspoon bicarbonate soda

2 free range eggs separated

3/4 cup almond milk

1 teaspoon vanilla extract

optional 1/4 teaspoon almond extract

method

place all dry ingredients in bowl flour,almond meal,sugar,bicarbonate soda.

Next add egg yolks,milk,vanilla and almond extract if using. Stir to combine.

In a separate bowl whisk egg whites until soft peaks form  then gently stir into your pancake mix.

Heat a fry pan over medium heat and melt a little coconut oil. Then cook your pancakes.
